Siberian Wild Forest Taiga Honey

£16

Raw, unpasteurised Honey collected in Siberia and imported direct to the U.K.

A unique honey from the vast forests of Siberia. Straddling the Arctic Circle, this Northeast Siberian ecoregion is one of the largest unaltered boreal forest areas in the world. Due to its high nutrient density, Taiga honey is extremely sought after and highly prized; something which is reflective in the price.

The Altai Republic community unites beekeepers from a number of villages, who make Altai honey and safeguard the local bees. Each producer has between 40 and 150 hives, and the honey is collected three times during the summer. The honey’s characteristics come from the region’s unique climate and its ancient beekeeping traditions.

Taiga honey is rich in the aroma of the taiga grassland and the flavour of the following flowers. Ezonu (Apiaceae -Angelika ursina-), Akinokirinso (Asteraceae -Goldenrod-), Akabana (Acalyptaceae -Willow-herb-), Snowpecker (Rosaceae -Meadowsweet-), European cedar (Apiaceae -Angelica-) , Wild strawberry (-Wildstrawberry-) etc.
